Ingredients:

  • 200g (7oz) white chocolate
  • 200g (7oz) butter, cut into small pieces
  • 200g (7oz) sugar
  • 4 eggs
  • 200g (7oz) wheat flour
  • 1 teaspoon of baking powder
  • 1 teaspoon of vanilla extract
  • pinch of salt
  • Cream for the cake:
  • 500ml (17 fl oz) cream 30%
  • 300g (10.5oz) white chocolate
  • 2 tablespoons of powdered sugar

Instructions:

  1. Preheat oven to 180 degrees C (356 degrees F). Line the baking tray with baking paper.
  2. Melt the white chocolate together with the butter in a water bath. Add sugar and mix until ingredients are combined.
  3. Combine the flour, salt and baking powder in a separate bowl.
  4. Add the eggs to the chocolate, one at a time, mixing thoroughly after each addition. Then add the vanilla extract.
  5. Slowly add the dry mixture to the wet mixture, stirring until the ingredients are combined.
  6. Pour the dough into the prepared pan and bake for 40 minutes, until the dough is springy to the touch. Leave to cool.
  7. In the meantime, prepare the cream. Heat the cream over low heat until it starts to gently boil, then add the white chocolate and powdered sugar, stirring until dissolved.
  8. Chill the cream in the fridge, then whip until fluffy.
  9. When the cake is completely cold, spread the cream on it and decorate as desired.
