Viennese Pancakes: A Subtle Taste of Elegance

Ingredients:
- 250g (8.8oz) wheat flour
- 500ml (2.1 cups ) of milk
- 4 eggs
- pinch of salt
- 1 tablespoon of sugar
- 1 teaspoon of vanilla extract
- 2 tablespoons of butter
- Plum jam, rose jam or cottage cheese for the filling
Instructions:
- In a large bowl, combine the flour, milk, eggs, salt, sugar, and vanilla extract. Use a mixer or a whisk to thoroughly mix the ingredients and get a smooth batter. It should have the consistency of slightly diluted sour cream.
- Melt a tablespoon of butter in the pan. While it is hot, pour a portion of the batter, spreading it over the entire surface of the pan to form a thin pancake. Bake it over medium heat for about 2-3 minutes until it is golden on the bottom and looks 'dry' on top. Turn the pancake over and bake for another 1-2 minutes.
- Repeat the process with the rest of the batter, adding more butter to the pan as needed. When each pancake is ready, spread it with the filling of your choice, roll it up or fold it in half and serve immediately.
