Ingredients:

  • 6 yolks
  • 75g sugar (2.6oz)
  • 500g mascarpone cheese (17.6oz)
  • 1 teaspoon of vanilla extract
  • 200ml strong black coffee, cooled (6.8 fl oz)
  • 50ml Amaretto Liqueur (1.7 fl oz)
  • Savoiardi biscuits (7oz)
  • 2 tbsp cocoa for sprinkling

Instructions:

  1. In a bowl, beat the yolks with the sugar until the ingredients are well combined and form a smooth mass.
  2. Add the mascarpone cheese to the yolk mixture. Then add the vanilla extract and mix everything until you get a homogeneous consistency.
  3. In a separate bowl, combine the cooled coffee with the Amaretto liqueur .
  4. Savoiardi biscuits quickly in the coffee and liqueur mixture, then place them in a single layer on the bottom of the cake tin.
  5. Apply a layer of mascarpone mass on the biscuits . Repeat these two steps with another layer of biscuits and mass.
  6. Sprinkle the top of the cake with cocoa.
  7. Put the cake in the fridge for at least 2 hours so that the ingredients integrate well and the dessert acquires the right consistency.
