Ingredients:

  • 2 sponge cakes
  • 500 ml heavy cream (about 17 fl oz)
  • 4 tablespoons powdered sugar (about 60g / 2.1oz)
  • 500g mixed fruit (about 1.1 lbs )
  • Fruit jelly to stabilize the fruit (optional)

Instructions:

  1. Place biscuit pancakes on a large flat tray or cake stand. If the pancakes are thick, you can cut them in half.
  2. Whip the heavy cream with the powdered sugar until stiff.
  3. Put half of the whipped cream on one of the biscuit pancakes and spread it evenly.
  4. Put half of the fruit on the whipped cream. Then cover with the second sponge cake.
  5. Spread the remaining whipped cream on the top and sides of the second sponge cake. Put the rest of the fruit on top. If you use jelly, prepare it according to the instructions on the package and pour it over the fruit.
  6. Place the cake in the fridge for a few hours to allow the ingredients to meld and the jelly to harden.
