Sand cake with lemon cream - the Queen of Polish Desserts
Sand cake is one of those traditional cakes that is associated with home warmth, family and happy moments spent at the table. When we add refreshing lemon cream to this classic cupcake, we get a dessert that is a real poem of flavors. This proposal is perfect for any occasion - for family meetings, special celebrations or just for a moment of pleasure in solitude with a cup of coffee. Sand cake is one of the most popular cakes in Poland. The name 'sand' comes from the consistency of the dough, which is brittle and delicate, resembling sand. In turn, lemon cream will add refreshment and lightness to the cake. The combination of these two ingredients gives a unique effect that will surely appeal to every gourmand.
Ingredients:
- 300g flour (10.6oz)
- 200g butter (7oz)
- 150g sugar (5.3oz)
- 6 yolks
- 1 teaspoon of baking powder
- Juice and zest of 2 lemons
- 4 yolks
- 100g sugar (3.5oz)
- 50g butter (1.8oz)
Instructions:
- Preheat oven to 180°C (356°F). Melt the butter and cool.
- In a large bowl, mix flour, sugar and baking powder. Add melted butter and egg yolks, then knead the dough.
- Prepare a cake mold, grease it with butter and sprinkle with breadcrumbs. Pour the dough into the mold.
- Bake in the oven for about 40-45 minutes, until the cake is golden and a skewer comes out clean when inserted into the cake.
- In the meantime, prepare the lemon cream. In a saucepan, mix the lemon juice and zest, egg yolks and sugar. Cook over medium heat, stirring constantly, until the ingredients combine and the mixture begins to thicken. Remove from heat and add butter, stirring until melted.
- When the cake is ready, let it cool down and then cover it with lemon cream.
