Ingredients:

  • Sponge cake:
  • 4 eggs (approx. 200g or 7oz)
  • 120g (4.23oz) of sugar
  • 120g (4.23oz) wheat flour
  • 1 teaspoon of baking powder
  • vanilla cream:
  • 500ml (16.9 fl oz) cream 30%
  • 2 sticks of vanilla
  • 100g (3.5oz) powdered sugar
  • Additionally:
  • 500g (17.6oz) cherries (fresh or canned)
  • 2 tablespoons of gelatin

Instructions:

  1. Preheat oven to 180 degrees Celsius (356 degrees Fahrenheit). Beat eggs with sugar until fluffy. Then add the sifted flour with baking powder and mix gently.
  2. Pour the batter into a springform pan lined with baking paper and bake for about 25 minutes until golden. Leave to cool after baking.
  3. Whip the cream stiff with powdered sugar. Scoop out the seeds from the vanilla pods and add to the whipped cream. Mix gently.
  4. Mix the cherries (if they are fresh, previously pitted) with the gelatin and heat until the gelatin dissolves.
  5. Cut the biscuit into two layers. On the first layer, put half of the cream, then half of the cherries. Cover with the second layer and spread the remaining cream and cherries on it.
  6. Chill the cake in the fridge for at least 2 hours before serving.
