Ingredients:

  • 3 ripe bananas
  • 200g wheat flour (7oz)
  • 150g sugar (5.3oz)
  • 125g butter (4.4oz)
  • 2 eggs
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1 teaspoon of vanilla extract

Instructions:

  1. Preheat oven to 180 degrees C (356 degrees F). Prepare the baking pan by greasing it with butter and dusting it with flour.
  2. In a bowl, beat the butter with the sugar until creamy. Add the eggs, one at a time, mixing thoroughly after each addition.
  3. Peel the bananas and mash them into a mousse. Add to the bowl with the butter and eggs.
  4. Sift the flour, baking powder and soda into a bowl. Gently mix the ingredients.
  5. Transfer the dough to the prepared form. Place in the oven and bake for about 60 minutes, until the cake is golden and a skewer comes out clean when inserted into the center of the cake.
  6. Allow the cake to cool before slicing.
