Ingredients:

  • Cake:
  • 500g (17.6oz) wheat flour
  • 40g (1.4oz) fresh yeast
  • 80g (2.8oz) sugar
  • 250ml (8.5fl oz) milk, warmed
  • 80g (2.8oz) butter, melted
  • pinch of salt
  • zest of one lemon
  • Filling:
  • 600g (21oz) fresh fruit (strawberries, raspberries, peaches, etc.)
  • 2 tablespoons of potato flour
  • 2 tablespoons of sugar

Instructions:

  1. Dissolve yeast in warm milk with added sugar. Leave for 10 minutes for the yeast to work.
  2. In a large bowl, mix the flour, salt and lemon zest. Add butter and yeast leaven. Knead the dough until it becomes smooth and elastic.
  3. Cover the dough with a cloth and leave in a warm place for about 1 hour to double in size.
  4. In the meantime, prepare the fruit: wash, dry and cut into smaller pieces (if they are large). Mix the fruit with the potato flour and sugar.
  5. After an hour, put the risen dough on a baking tray lined with baking paper, form the edges and spread the fruit on top.
  6. Bake in an oven preheated to 180°C (356°F) for about 30-40 minutes, until the pastry is golden and the fruit is juicy.
