The secret lies in its simplicity - a tart with shortcrust pastry is a variation on the French tarte tatin , which became famous as an 'opposite' dessert. Traditionally, fruit (usually apples) are placed at the bottom of the mold and the dough on top. After baking and cooling, the tart is turned over so that the fruit is on top. But what makes a shortcake tart so special? The fact that we can modify it and adapt it to our own needs. We can fill it with seasonal fruit, cream, chocolate, cheese, and even vegetables and meat, creating sweet or savory versions. The key element is the shortcrust pastry - delicate, slightly crumbly and ideal as a base for all kinds of fillers. The base is of course shortcrust pastry, which, although simple to make, requires a certain precision. It is important that the ingredients are cold and that the dough is kneaded quickly - this ensures that it will be crispy and delicate.

Ingredients:

  • 250g (8.8oz) wheat flour
  • 150g (5.3oz) butter
  • 2 yolks
  • 70g (2.5oz) powdered sugar
  • Pinch of salt
  • The zest of 1 lemon

Instructions:

  1. All ingredients should be cold. Sift the flour onto the board, add the butter cut into small pieces. Quickly knead the dough by adding the rest of the ingredients.
  2. Form a ball from the dough, wrap in cling film and place in the fridge for about 30 minutes.
  3. After this time, roll out the dough to a thickness of about 3 mm and line the tart tin with it.
  4. Prick the dough with a fork, cover with baking paper, on which lay, for example, dry beans (so that the dough does not rise during baking).
  5. Bake in an oven preheated to 200°C (392°F) for about 15 minutes. Then remove weights and paper and bake for another 5 minutes.
  6. After cooling down, the shortcrust pastry is ready to use - you can fill it with your favorite ingredients.
