Ingredients:

  • 200g flour (7oz)
  • 200g sugar (7oz)
  • 4 eggs
  • 1 teaspoon of baking powder
  • 500ml milk (17 fl oz)
  • 2 sticks of vanilla
  • 6 yolks
  • 150g sugar (5.3oz)
  • 300g raspberries (10.6oz)

Instructions:

  1. Preheat oven to 180°C (356°F). Beat eggs with sugar until fluffy, then add flour mixed with baking powder and mix gently.
  2. Pour the batter into the springform pan and bake for about 30 minutes, until the batter is golden.
  3. In the meantime, prepare the vanilla cream. Boil the milk with the halved vanilla pods. Beat the yolks with the sugar, then add to the milk. Stir over medium heat until the cream thickens.
  4. When the cake is ready, let it cool down and cut it into two layers. Soak the bottom plate with a little milk, and then spread it with vanilla cream. Arrange the raspberries on the cream, then cover with the second cake layer. Spread the rest of the cream on the top and sides of the cake.
  5. Finally, decorate the cake with the remaining raspberries.
