Ingredients:

  • 200g flour (7oz)
  • 200g sugar (7oz)
  • 100g butter (3.5oz)
  • 4 eggs
  • 1 teaspoon of baking powder
  • 500g fresh raspberries (17.6oz)
  • 500ml cream 30% (17 fl oz)
  • 150g powdered sugar (5.3oz)

Instructions:

  1. We start by preparing the dough. Mix flour with baking powder.
  2. Beat the butter with the sugar until fluffy, then add the eggs one at a time, beating all the time.
  3. Add the flour and baking powder to the butter mixture and mix until combined.
  4. Transfer the dough to a springform pan lined with baking paper and bake in an oven preheated to 180 degrees C for about 30 minutes. Cool the cake after baking.
  5. Blend the raspberries into a mousse, and then rub through a sieve to get rid of the seeds. Add powdered sugar and mix.
  6. Whip the cream until stiff, then add the raspberry mousse and mix gently.
  7. Layer the cooled cake with raspberry cream and put it in the fridge for at least 2 hours before serving.
