Ingredients:
- 200g flour (7oz)
- 200g sugar (7oz)
- 100g butter (3.5oz)
- 4 eggs
- 1 teaspoon of baking powder
- 500g fresh raspberries (17.6oz)
- 500ml cream 30% (17 fl oz)
- 150g powdered sugar (5.3oz)
Instructions:
- We start by preparing the dough. Mix flour with baking powder.
- Beat the butter with the sugar until fluffy, then add the eggs one at a time, beating all the time.
- Add the flour and baking powder to the butter mixture and mix until combined.
- Transfer the dough to a springform pan lined with baking paper and bake in an oven preheated to 180 degrees C for about 30 minutes. Cool the cake after baking.
- Blend the raspberries into a mousse, and then rub through a sieve to get rid of the seeds. Add powdered sugar and mix.
- Whip the cream until stiff, then add the raspberry mousse and mix gently.
- Layer the cooled cake with raspberry cream and put it in the fridge for at least 2 hours before serving.
