Ingredients:

  • 250g (8.8oz) wheat flour
  • 200g (7oz) sugar
  • 100g (3.5oz) butter
  • 4 eggs
  • 1 teaspoon of baking powder
  • 500ml (17oz) cream 30%
  • 100g (3.5oz) powdered sugar
  • 1 stick of vanilla
  • 200g (7oz) blueberries
  • powdered sugar for decoration

Instructions:

  1. Preheat oven to 180°C (356°F). Mix flour with baking powder.
  2. Beat butter with sugar until fluffy. Add one egg at a time, beating all the time. Then add the flour and baking powder slowly, mixing gently.
  3. Pour the batter into the springform pan and bake for about 30 minutes until golden and springy. Leave to cool.
  4. While the sponge cake is baking, prepare the vanilla cream. Whip the cream with powdered sugar. Sift the seeds from the vanilla pod through a sieve, then add to the cream. Beat until a thick cream forms.
  5. When the sponge cake is cold, cut it in half. Spread half of the vanilla cream on one half and place half of the blueberries on it. Cover with the other half of the sponge cake.
  6. Spread the rest of the cream on top of the cake and place the remaining blueberries. Sprinkle with powdered sugar for decoration.
