Ingredients:

  • 250g (8.8 oz) wheat flour
  • 200g (7 oz) sugar
  • 200g (7 oz) butter
  • 4 eggs
  • 1 teaspoon of baking powder
  • 500ml (16.9 fl oz) milk
  • 2 tablespoons of sugar
  • 2 tablespoons of potato flour
  • 1 stick of vanilla

Instructions:

  1. Start by preparing the dough. Beat the butter and sugar until fluffy, then add the eggs one at a time, beating all the time. Finally, add flour mixed with baking powder and mix everything gently with a spoon.
  2. Put the dough in a cake pan, previously greased and sprinkled with breadcrumbs. Bake in an oven preheated to 180°C (356°F) for about 45 minutes.
  3. In the meantime, prepare the vanilla cream. Heat the milk with the vanilla pod in a pot. In a separate bowl, mix the sugar with the potato flour, then add some warm milk and mix to make a smooth paste. Then pour it into a pot with milk, stir over low heat until the cream thickens.
  4. When the sand cake is ready, let it cool down, then cut it in half and spread the vanilla cream on the bottom half. Cover with the top half and serve.
