Ingredients:

  • Sponge cake:
  • 6 eggs
  • 1 cup (200g/7oz) sugar
  • 1 cup (130g/4.5oz) wheat flour
  • 1 teaspoon of baking powder
  • Mascarpone cream :
  • 500g (17.6oz) mascarpone cheese
  • 200g (7oz) powdered sugar
  • 400ml (13.5 fl oz) heavy cream 30%

Instructions:

  1. Sponge cake: Beat eggs with sugar until fluffy.
  2. Add the sifted flour with baking powder, mixing gently.
  3. Pour the batter into a springform pan lined with baking paper and bake in an oven preheated to 180°C (356°F) for about 30 minutes.
  4. Mascarpone cream : Mix mascarpone cheese with powdered sugar until smooth.
  5. Whip the heavy cream until stiff, then add to the cheese mass, stirring gently.
  6. Assembly of the cake: Put the cooled sponge cake in half, and then pour the mascarpone cream over it .
