Ingredients:

  • 200g (7 oz) dark biscuits or Oreo cookies
  • 100g (3.5 oz) butter
  • 1 kg (35 oz) cottage cheese
  • 200g (7 oz) sugar
  • 5 large eggs
  • 1 tablespoon of potato starch
  • Juice and grated zest of 1 lemon

Instructions:

  1. Start by preparing the bottom. Grind the cookies in a food processor to fine sand. Melt the butter and mix it with the cookies, then put it on the bottom of the baking pan.
  2. Then prepare the cheese mass. In a large bowl, combine the cottage cheese, sugar, eggs, potato starch, lemon juice, and grated zest. Mix everything until smooth.
  3. Put the cheese mass on the prepared bottom and level the surface.
  4. Bake the cheesecake in an oven preheated to 160°C (320°F) for about 60 minutes, until the cheesecake is firm but still slightly wobbly in the center. Leave the cheesecake in the oven with the door ajar to cool.
