Ingredients:

  • 2 half cups of wheat flour - 300 g (10.6 oz)
  • 3/4 stick real butter - 150 g (5.3 oz)
  • 1 large egg - about 56 g (2 oz)
  • A pinch of salt
  • 250 g (8.8 oz) raw smoked bacon or Black Forest ham
  • 3 large eggs - up to 200 g (7 oz)
  • 200 g (7 oz) 18% sour cream
  • 150 ml (5 fl oz) sweet cream 30%
  • 100 g (3.5 oz) Gruyère or possibly Emmental cheese
  • 1/3 teaspoon nutmeg
  • A pinch of pepper and salt
  • A handful of parsley

Instructions:

  1. Make a savory shortcrust pastry by mixing wheat flour with butter, egg and salt.
  2. Wrap the dough in foil and put it in the fridge for an hour.
  3. Place the tart mold with the dough, then bake in the oven at 180 degrees for 20 minutes.
  4. Meanwhile, prepare the filling by mixing eggs, cream, cheese, nutmeg, pepper and salt.
  5. Sear the bacon in a pan, then add it to the bowl of egg liquid.
  6. Pour the filling onto the baked base of the shortcrust pastry.
  7. Bake the tart in the oven for about 30-35 minutes, until nicely browned.
