Donuts with a Rose: A Sweet Treasure of Polish Cuisine

Donuts are one of the most popular pastries in Poland, especially loved and eaten on the last Thursday before Lent, known as Fat Thursday. But one of the most unique and distinctive types of donuts to be found in Poland is the rose donut. The rose donut is a sweet, fluffy donut filled with thick rose jam that adds a subtle floral twist to this traditional dessert. Rose buds are not as easy to make as you might think. It's a process that requires patience and precision, but the reward is worth the effort - a fluffy, sweet donut with a unique flavor that's unmistakable.

Ingredients:

  • 500g wheat flour (17.6oz)
  • 50g fresh yeast (1.8oz)
  • 100g sugar (3.5oz)
  • 6 yolks
  • 100g butter (3.5oz)
  • 250ml milk (8.5fl oz)
  • The zest of 1 lemon
  • Pinch of salt
  • 1 teaspoon of spirit
  • 300g rose jam (10.6oz)
  • Powdered sugar for sprinkling
  • Frying oil

Instructions:

  1. Dissolve the yeast in warm milk with 1 tablespoon of sugar and 1 tablespoon of flour. Set aside for 15 minutes for the yeast to 'start'.
  2. Melt the butter and cool. Beat the yolks with the sugar until light. Add yeast, beaten egg yolks, melted butter, lemon zest, a pinch of salt and spirit to the bowl with flour.
  3. Make a smooth, elastic dough. Cover and leave in a warm place to rise for about 2 hours.
  4. After this time, knead the dough again and roll it out to a thickness of about 1.5 cm. Cut out circles using a glass or a special mold.
  5. Cover the formed donuts and leave for about 30 minutes to rise again.
  6. Deep fry the donuts over medium heat. Be sure to fry them on both sides until golden brown.
  7. Finally, while the donuts are still warm, fill them with rose jam using a pastry bag and sprinkle with powdered sugar.
