Ingredients:

  • 1 kg of tomatoes (2.2 lbs ) or 2 cans of canned tomatoes
  • 1 onion
  • 2 cloves of garlic
  • 1 tablespoon of vegetable oil
  • 1.5 liters of vegetable stock (50 fl oz)
  • 100g of rice (3.5oz)
  • Salt, pepper to taste
  • Fresh herbs for decoration (basil, parsley)

Instructions:

  1. Sauté finely chopped onion and garlic in hot oil.
  2. Add chopped tomatoes (or canned tomatoes) and fry for a few minutes.
  3. Pour in the broth and cook over low heat for about 30 minutes.
  4. In the meantime, cook the rice according to the instructions on the package.
  5. After 30 minutes, blend the soup until smooth, season with salt and pepper.
  6. Add the cooked rice to the soup, stir and cook for a few more minutes.
  7. Serve the soup garnished with fresh herbs.
