Carrot and zucchini soup: A combination of simplicity and freshness

- 300g (10.5 oz) zucchini
- 1 onion
- 2 cloves of garlic
- 1.5 liters (50.7 fl oz) vegetable broth

Instructions:
- Peel and cut the carrot into small pieces. Cut the zucchini into pieces without peeling it.
- Peel the onion and garlic and chop finely.
- In a heavy-bottomed pan, heat the oil, add the onion and garlic and fry over low heat until the onion is translucent.
- Add chopped carrots and zucchini, cook for a few more minutes until the vegetables start to soften.
- Add the vegetable stock, cover the pot and cook over low heat for about 20 minutes until the vegetables are tender.
- When the vegetables are ready, blend the soup until smooth, season with salt and pepper to taste.
