This soup is a true jewel of Polish cuisine, which is not only tasty but also healthy, thanks to the content of vitamins and minerals in beets.

Ingredients:

  • 1 kg of beets (2.2 lbs )
  • 2 carrots (approx. 200g - 7oz)
  • 1 parsley (approx. 200g - 7oz)
  • 1 onion (approx. 150g - 5.3oz)
  • 2 cloves of garlic
  • 3 bay leaves
  • 5 grains of allspice
  • Salt and pepper to taste
  • Juice of one lemon
  • 1.5 liters of water (50 fl oz)

Instructions:

  1. Beets, carrots and parsley are thoroughly washed and peeled. Cut all vegetables into small pieces.
  2. Chop the onion and garlic.
  3. In a large pot over medium heat, sauté the onion and garlic in a little oil until translucent.
  4. Add beets, carrots, parsley, bay leaves and allspice. We mix.
  5. Pour the vegetables with water and simmer for about 1.5 hours.
  6. After this time, blend the soup until smooth. Season with salt, pepper and lemon juice. We cook for another 15 minutes.
  7. Before serving, the borscht can be strained to remove any remaining spices.
