Ingredients:

  • 500g (17.6oz) fresh green peas
  • 2 medium carrots
  • 1 small onion
  • 2 cloves of garlic
  • 1.5L (50.72 fl oz) of vegetable stock
  • 2 tablespoons (1.06oz) of vegetable oil
  • Salt and pepper to taste
  • Sour cream and fresh mint to serve

Instructions:

  1. In a large pot, in hot oil, sauté finely chopped onion and garlic.
  2. Add diced carrots, fry for about 5 minutes.
  3. Add fresh green peas to the pot and pour the broth over everything. Cook over medium heat until the vegetables are soft.
  4. Once cooked, blend the soup to a smooth cream.
  5. Season to taste with salt and pepper. If the soup is too thick, add a little more broth or water.
  6. Serve the soup garnished with a spoonful of cream and a fresh mint leaf.
