Preparation of leek cream soup is not complicated. However, it requires some time and patience, especially if we want our soup to be really creamy. It all starts with carefully washing and slicing the leek, then stewing it in butter to release its full flavor. Then add the broth and cook until the vegetables are tender. Finally, just blend the soup to a smooth cream and voilà ! We have a delicious soup that surprises with its delicacy.
Ingredients:
- 2 large leeks (about 400g / 14 oz)
- 1 large onion
- 2 cloves of garlic
- 1 liter of vegetable broth
- 200ml (6.7 fl oz) cream 30%
- 2 tablespoons of butter
- salt, pepper to taste
Instructions:
- Wash the leeks, cut them into pieces and discard the green parts.
- Peel the onion and garlic, chop finely.
- Heat the butter in a pot, add the onion and garlic and cook until translucent.
- Add the chopped leeks, stew for about 10 minutes, until they become soft.
- Pour in the broth, cook over medium heat for about 30 minutes.
- Blend the soup until smooth and put it back into the pot.
- Add cream, season to taste with salt and pepper. We cook for a few more minutes.
