Ingredients:
- 1 medium Hokkaido pumpkin (about 1.5 kg or 3.3 lbs )
- 1 large onion (approx. 150g or 5.3oz)
- 2 cloves of garlic
- 1 liter (1.05 quarts ) of vegetable stock
- 200ml (6.76 fl oz) 18% cream
- 2 tablespoons of vegetable oil
- Salt to taste
- Pepper to taste
- 1 teaspoon of ground nutmeg
Instructions:
- Wash the pumpkin, cut in half, and then remove the seeds and fibers. Cut the pumpkin into small pieces.
- Peel the onion and garlic, then finely chop.
- In a large pot, heat the oil over medium heat. Add chopped onion and garlic, fry until glassy.
- Add the chopped pumpkin to the pot, stir and fry for about 5 minutes.
- Add vegetable broth to the pot. Cover the pot and cook over medium heat for about 30 minutes until the pumpkin is tender.
- Once the pumpkin is soft, use a blender to blend the soup into a smooth cream.
- Pour the cream into the soup, then add salt, pepper and nutmeg to taste. Mix well.
- Cook the soup for a few more minutes until it is well heated.
