Ingredients:

  • 1 medium Hokkaido pumpkin (about 1.5 kg or 3.3 lbs )
  • 1 large onion (approx. 150g or 5.3oz)
  • 2 cloves of garlic
  • 1 liter (1.05 quarts ) of vegetable stock
  • 200ml (6.76 fl oz) 18% cream
  • 2 tablespoons of vegetable oil
  • Salt to taste
  • Pepper to taste
  • 1 teaspoon of ground nutmeg

Instructions:

  1. Wash the pumpkin, cut in half, and then remove the seeds and fibers. Cut the pumpkin into small pieces.
  2. Peel the onion and garlic, then finely chop.
  3. In a large pot, heat the oil over medium heat. Add chopped onion and garlic, fry until glassy.
  4. Add the chopped pumpkin to the pot, stir and fry for about 5 minutes.
  5. Add vegetable broth to the pot. Cover the pot and cook over medium heat for about 30 minutes until the pumpkin is tender.
  6. Once the pumpkin is soft, use a blender to blend the soup into a smooth cream.
  7. Pour the cream into the soup, then add salt, pepper and nutmeg to taste. Mix well.
  8. Cook the soup for a few more minutes until it is well heated.
