Minestrone Soup Recipe

- 4 cloves garlic, minced or finely chopped
- ½ teaspoon dried oregano
- ½ teaspoon dried thyme
- 1 large can (28 ounces) diced tomatoes, with juice
- 4 cups (32 ounces) vegetable broth
- 2 cups water
- 1 teaspoon sea salt
- 2 bay leaves
- pinch of red pepper flakes
- Freshly ground black pepper
- 1 cup orecchiette, elbow, or small shell pasta
- 1 can (15 ounces) white beans or cannellini beans, rinsed and drained
- 2 cups young spinach, chopped kale, or shredded cabbage leaves
- 2 teaspoons lemon juice
- Freshly grated Parmesan cheese, for serving (optional)
Instructions:
- In a large pot, heat olive oil over medium heat.
- Add onion, carrots, and celery. Sauté for about 5-7 minutes until the vegetables soften.
- Add tomato paste, softened seasonal vegetables, garlic, oregano, and thyme. Sauté for another 5 minutes.
- Add diced tomatoes with juice, vegetable broth, water, salt, bay leaves, and red pepper flakes.
- Bring to a boil, then reduce heat and simmer for about 30-40 minutes until the vegetables are tender.
- Meanwhile, cook the pasta according to the package instructions.
- Add beans and spinach to the soup pot and cook for another 5 minutes until the vegetables are tender and the spinach wilts.
- Add lemon juice and season with salt and freshly ground black pepper to taste.
- Serve with cooked pasta, sprinkled with grated Parmesan cheese (optional).
