Carrot and chickpea soup: Treasury of Health and Taste
When colder days slowly enter our everyday life, we dream of warm and filling meals that will fill us with energy and satisfy our palates. At times like these, soup is the perfect choice. Today's recipe is not only a great comfort meal, but also a true treasury of health: carrot and chickpea soup. Carrot, although often underestimated, is a vegetable full of benefits for our health. It is a source of vitamins A, K1, B6, fiber and biotin, also known as vitamin H. On the other hand, chickpeas, considered one of the healthiest vegetable sources of protein, provide not only protein, but also fiber, iron, zinc and phosphorus. The combination of these two ingredients creates a soup with a wealth of flavors and nutritional values.
Ingredients:
- 2 tablespoons (1oz) olive oil
- 1 large onion, diced
- 2 cloves of garlic, chopped
- 500g (1.1lb) carrots, sliced
- 400g (14oz) chickpeas (cooked or canned, drained)
- 1 liter of vegetable broth
- 1 teaspoon of turmeric
- 1 teaspoon of cumin
- Salt and pepper to taste
- Fresh parsley for decoration (optional)
Instructions:
- Heat the olive oil in a large pot. Add chopped onion and fry until translucent. Add chopped garlic and fry for another minute.
- Add the chopped carrot to the pot. Sauté for a few minutes until the carrots start to soften.
- Add chickpeas, broth, turmeric and cumin. Season to taste with salt and pepper.
- Cook the soup over medium heat for about 20 minutes until the carrots are soft.
- Optional: You can use a blender to blend part or all of the soup to a smooth consistency.
- Serve the soup hot, garnished with fresh parsley.
