Ingredients:

  • 1 kg (2.2 lbs ) of carrots
  • 5 cm (2 inches ) piece of fresh ginger
  • 1 onion
  • 2 cloves of garlic
  • 1 liter of vegetable broth
  • Salt and pepper to taste
  • 2 tablespoons of oil

Instructions:

  1. Peel the carrots and cut into small pieces. Peel the ginger and chop finely. Peel and chop the onion and garlic.
