Ingredients:
- 500g (1.1 lbs ) of broccoli, cut into pieces
- 1 large onion, diced
- 2 cloves of garlic, finely chopped
- 1 liter (33.8 fl oz) of vegetable stock
- 200g (7 oz) cheddar cheese, grated
- 2 tablespoons (30 ml) olive oil
- 200 ml (6.8 fl oz) 30% cream
- Salt and pepper to taste
Instructions:
- Heat the olive oil in the skillet. Add the chopped onion and garlic and cook over medium heat until the onion is tender and translucent.
- Add the broccoli to the pan, stir and cook for about 5 minutes.
- Add the vegetable stock, cover the pan and cook over medium heat for about 15 minutes until the broccoli is tender.
- Remove the pan from the heat, add the grated cheddar cheese and stir until the cheese melts.
- Add the cream, season with salt and pepper to taste, then use an immersion blender to blend the soup until smooth.
- Serve hot, with crusty bread on the side.
