Ingredients:

  • 500g (17.6oz) carrots
  • 2 medium leeks
  • 1 small onion
  • 2 tablespoons of butter (1oz)
  • 1.5 liters (6.3 cups ) of vegetable stock
  • Salt and pepper to taste

Instructions:

  1. Peel the carrot and cut into small pieces. Wash leek and onion thoroughly, peel and cut into thin slices.
  2. Heat the butter in a large frying pan. Add chopped onion and fry until glassy. Add the chopped leek and fry together with the onion for another 5 minutes.
  3. Add chopped carrots to the vegetables in the pan. Fry everything together for about 10 minutes.
  4. Transfer the vegetables to the pot, add the vegetable broth. Cook over medium heat for about 30 minutes until carrots are tender.
  5. After cooking, blend the soup into a smooth cream with a blender . Season with salt and pepper to taste.
