Ingredients:

  • About 500g (17.6oz) cooked corn - 3 cans or 3 cobs
  • 1 can of coconut milk - 400ml (13.5oz)
  • 1 cup of water - 250ml (8.5oz)
  • 3 cloves of garlic - about 15g (0.5oz)
  • 2 tbsp olive or ghee - about 20g (0.7oz)
  • Spices: 1 teaspoon salt; 1/2 teaspoon ginger; 1/3 teaspoon each pepper, sweet and hot paprika; pinch of turmeric (can be omitted)

Instructions:

  1. Pour a whole can of coconut milk and a glass of water into the pot.
  2. Add cooked corn, olive oil or clarified butter, peeled garlic cloves and all spices.
  3. Bring the soup to a boil, then reduce the heat and simmer covered for about 10-12 minutes.
  4. After this time, turn off the soup and blend it until smooth with a blender.
  5. Strain the soup through a metal sieve to remove any tough corn husks.
  6. Test the soup's flavor and add more spices as desired. If the soup is too thick, add some boiling water.
