Ingredients:

  • 3 large leeks, cut into pieces (white and light green parts only)
  • 500g (1.1 lbs ) potatoes, peeled and diced
  • 1 liter (33.8 fl oz) of vegetable stock
  • 2 tablespoons (30 ml) olive oil
  • 200 ml (6.8 fl oz) 18% cream
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in the skillet. Add the chopped leeks and cook over medium heat until the leeks are tender and translucent.
  2. Add the chopped potatoes and vegetable broth, cover the pan and cook over medium heat for about 20 minutes until the potatoes are tender.
  3. Remove the pan from the heat, add the cream, season with salt and pepper to taste, then use an immersion blender to blend the soup until smooth.
  4. Serve hot, with crusty bread on the side.
