Juicy tomatoes, sweet carrots, and celery add depth of flavor, while aromatic spices such as cumin, coriander, turmeric or chilli add an oriental character. Ingredients:

  • 200g (7oz) red lentils
  • 1 large onion
  • 2 cloves of garlic
  • 2 carrots
  • 2 stalks of celery
  • 400g (14oz) canned tomatoes
  • 1 teaspoon of turmeric
  • 1 teaspoon of cumin
  • Salt and pepper to taste
  • 1.5L (50fl oz) of vegetable stock
  • Olive oil for frying

Instructions:

  1. Finely chop the onion, garlic, carrot and celery.
  2. Heat the olive oil in a large frying pan. Add chopped vegetables and cook over medium heat until soft.
  3. Add lentils, tomatoes, spices, salt and pepper. Pour in the broth, mix.
  4. Cook the soup over low heat for about 30 minutes, until the lentils are soft.
  5. The soup can be served as is, or blended to a smooth consistency.
