Ingredients:
- 800 g (28.2 oz) pumpkin
- 1 larger carrot - about 180 g (6.3 oz)
- 1 medium onion - about 200 g (7 oz)
- 1 can of coconut milk - 400 g (14 oz)
- 500 g (17.6 oz) potatoes
- 4 cloves of garlic - about 20 g (0.7 oz)
- 25 g (0.9 oz) fresh ginger or a teaspoon of ginger powder
- 3 tablespoons clarified butter - about 45 g (1.6 oz)
- 3 cups of water - 750 ml (25.4 fl oz)
- herbs and spices: 1 level tbsp curry; 1 tsp salt; ½ tsp each pepper and hot paprika; 1/3 tsp nutmeg
Instructions:
- Start by preparing the vegetables: peel the pumpkin, carrots, potatoes and onions. Cut them into small pieces.
- Heat the butter in a large pot, add the chopped onion and carrot. Fry for about 5 minutes.
- Add chopped pumpkin, potatoes, garlic and ginger. Add spices and pour water over everything.
- Cook the soup over medium heat for about 20-25 minutes until the vegetables are tender.
- Add coconut milk and blend the soup until smooth.
- Check the taste and add more salt or pepper if necessary.
