Ingredients:

  • 250g green lentils (about 8.8 oz)
  • 1 large onion (about 150g / 5.3oz)
  • 2 carrots (about 200g / 7oz)
  • 2 cloves of garlic
  • 1 liter vegetable stock (about 4.2 cups )
  • 2 tablespoons of olive oil
  • Salt and pepper to taste
  • Fresh herbs for decoration (e.g. parsley or dill)

Instructions:

  1. Wash and soak the lentils for about an hour, then drain.
  2. Peel the onion, garlic and carrots and finely chop.
  3. Heat the oil in a pan, add the chopped onion, garlic and carrots, and then fry until the vegetables soften.
  4. Add the drained lentils to the vegetables and pour the broth over the whole thing. We bring to a boil.
  5. Simmer the soup over low heat for about 40 minutes, until the lentils are soft.
  6. Finally, season the soup with salt and pepper to taste and decorate with fresh herbs before serving.
