Ingredients:

  • about 800g of poultry - e.g. two large chicken legs (28.2oz)
  • 6 tablespoons of barley groats, e.g. farmhouse - 80 g (2.8oz)
  • 500g potatoes - 4-5 pieces (17.6oz)
  • 1 medium carrot - about 160 g (5.6 oz)
  • 1 smaller parsley root - about 100 g (3.5 oz)
  • 1 small onion or leek slice - 80 g (2.8 oz)
  • 2 liters of water (67.6 fl oz)
  • two tablespoons each of chopped parsley and dill
  • spices: 1 level teaspoon salt; 1/3 level teaspoon pepper; bay leaf; 2 grains of allspice; pinch of turmeric

Instructions:

  1. Pour the meat with two liters of water. Add a bay leaf, two herb seeds and a small onion or a piece of leek.
  2. Slow cook for an hour.
  3. Meanwhile, prepare the vegetables. Peel and dice the potatoes, carrots and parsley.
  4. After cooking for an hour, remove the meat and onions from the soup. Allow the meat to cool slightly, then remove the meat and place it back in the stock pot.
  5. Add chopped vegetables and grits to the pot. Also add salt and pepper.
  6. Cook the soup covered for 30 minutes.
  7. After this time, add a pinch of turmeric and two tablespoons of freshly chopped dill. Cook for another 5 minutes. Check the taste and add more salt if necessary.
