Ingredients:

  • 5 large onions (about 1kg (35oz))
  • 2 tablespoons butter (about 30g (1oz))
  • 1 tablespoon vegetable oil (about 15ml (0.5oz))
  • 1 liter of beef stock (about 33.8oz)
  • 1 baguette (about 250g (8.8oz))
  • 100g (3.5oz) grated Emmental cheese
  • salt to taste
  • pepper to taste

Instructions:

  1. Peel the onions and cut them into thin crescents. In a large pot, heat the butter with the oil.
  2. Add the onion to the pot and cook over medium heat, stirring occasionally, until the onion begins to brown. This should take about 20 minutes.
  3. After this time, when the onion is well browned, add the broth. Bring the soup to a boil, then reduce the heat and simmer for about 30 minutes.
  4. Meanwhile, cut the baguette into slices and bake them in the oven at 180°C (356°F) until crispy.
  5. Remove the bread from the oven and sprinkle it with grated cheese. Return it to the oven and bake until the cheese is melted and lightly browned.
  6. When the soup is ready, season it with salt and pepper to taste. Serve with slices of bread sprinkled with cheese.
