Onion soup recipe

Onion, the main ingredient in this soup, is one of the oldest and most used vegetables in the world. Ingredients:
- 5 large onions (about 1kg (35oz))
- 2 tablespoons butter (about 30g (1oz))
- 1 tablespoon vegetable oil (about 15ml (0.5oz))
- 1 liter of beef stock (about 33.8oz)
- 1 baguette (about 250g (8.8oz))
- 100g (3.5oz) grated Emmental cheese
- salt to taste
- pepper to taste
Instructions:
- Peel the onions and cut them into thin crescents. In a large pot, heat the butter with the oil.
- Add the onion to the pot and cook over medium heat, stirring occasionally, until the onion begins to brown. This should take about 20 minutes.
- After this time, when the onion is well browned, add the broth. Bring the soup to a boil, then reduce the heat and simmer for about 30 minutes.
- Meanwhile, cut the baguette into slices and bake them in the oven at 180°C (356°F) until crispy.
- Remove the bread from the oven and sprinkle it with grated cheese. Return it to the oven and bake until the cheese is melted and lightly browned.
- When the soup is ready, season it with salt and pepper to taste. Serve with slices of bread sprinkled with cheese.
