  • 250g (8.8oz) pasta - any type (e.g. spaghetti, penne, rigatoni )
  • 200 g (7oz) cheese - any kind (e.g. cheddar, gouda, emmenthal)
  • 1 cup of milk (1 cup )
  • 2 tablespoons of butter
  • 1 teaspoon of flour
  • Salt, pepper to taste
  • Freshly grated parmesan for sprinkling
  • Fresh herbs for decoration (e.g. basil, parsley)

Instructions:

  1. Cook the pasta according to the instructions on the package until 'al dente '.
  2. Meanwhile, in a small pot over medium heat, melt the butter. Add the flour and mix quickly to form a roux.
  3. Add the milk to the roux, stirring constantly. Cook over low heat until the sauce thickens.
  4. Add grated cheese, salt and pepper to the sauce. Stir until the cheese melts and the sauce is smooth.
