Ingredients:

  • 800 g (28.2 oz) chicken liver - preferably chicken
  • 400 g (14.1 oz) onions - about 3 smaller ones
  • 400 g (14.1 oz) firm apples - about 2 smaller pieces
  • 4 tablespoons vegetable oil for frying
  • Spices: bay leaf (optional); 1 teaspoon marjoram; 1 tablespoon rosemary leaves; 1 level teaspoon salt; 1/2 level teaspoon pepper

Instructions:

  1. Clean the liver of veins and fat. If you use chicken liver, you don't need to cut it into smaller pieces.
  2. Put the pieces of liver in a well-heated pan with fat. Fry them on both sides for about one and a half to two minutes, until lightly browned.
  3. Prepare the onion. Peel and thinly slice. Add to pan and cook for about 20 minutes until glassy and brown.
  4. Prepare the apples. Cut them in half along the center of the core. Cut each half into four or more bells. Remove core portions and stems and stalks.
  5. Add the apples to the pan with the onions. Add a teaspoon of marjoram and rosemary leaves. Continue to cook everything like this for 10 minutes.
  6. When the apple pieces are slightly browned, put the livers back into the pan. Sprinkle the whole thing with pepper and cover with the lid. Stew the dish for about 15 minutes.
