Ingredients:

  • 400g Paella Rice or Risotto Rice - over 1.5 cups (14 oz)
  • 750 ml stock/chicken stock - 3 cups (25 fl oz)
  • 1 chicken breast fillet - about 230 g (8 oz)
  • Seafood: 425 g mixed seafood (15 oz); up to 400 g (14 oz) shrimp; 110 g (4 oz) squid; 200 g (7 oz) mussels
  • 120 g frozen peas - about 3/4 cup (4 oz)
  • 1 medium-sized onion - about 200 g (7 oz)
  • 1 medium pepper e.g. red - about 230 g (8 oz)
  • 300 g fleshy tomatoes - about 2 pieces (10.5 oz)
  • 4 cloves of garlic - about 20 g (0.7 oz)
  • 70 g good quality olive oil - less than 1/4 cup (2.5 fl oz)
  • 120 ml dry white wine - less than half a cup (4 fl oz)
  • herbs and spices: a handful of parsley: 1 bay leaf; a teaspoon each of salt and sweet paprika; half a teaspoon of pepper; 0.12 g of saffron
  • to serve: lemon

Instructions:

  1. Heat the oil in a large pot or wide frying pan. Add the chopped onion and fry for about 5 minutes.
  2. Add chopped peppers, garlic and bay leaf. Cook for another 5 minutes.
  3. Add chopped tomatoes and spices. Cook for another 5 minutes.
  4. Add wine and saffron. Cook for 10 minutes.
  5. Add chopped chicken fillet, parsley and dry rice. Cook for 5 minutes.
  6. Pour in the stock and cook over low heat for about 20 minutes until the rice is tender.
  7. Add seafood and peas. Cover and cook for about 10-15 minutes.
  8. Remove the lid and wait 5-10 minutes before serving.
