Ingredients:
- 1.5 kg (3.3 lbs ) of lamb, cut into pieces
- 2 tablespoons (30 ml) olive oil
- 2 large onions, diced
- 4 cloves of garlic, finely chopped
- 500 ml (16.9 fl oz) white wine
- 2 carrots, diced
- 3 bay leaves
- Chives, to serve
- Salt and pepper to taste
Instructions:
- Heat the olive oil in the skillet. Add the pieces of lamb and fry over medium heat until golden brown.
- Add the chopped onion and garlic to the pan and fry until the onion is translucent.
- Add the white wine to the pan, increase the heat and cook until the alcohol evaporates.
- Add the carrots and bay leaves, then cover the pan and reduce the heat to a minimum. Stew for about 2 hours until the meat is tender.
- Season with salt and pepper to taste, then sprinkle with chives just before serving.
