Ingredients:

  • 1.5 kg (3.3 lbs ) of lamb, cut into pieces
  • 2 tablespoons (30 ml) olive oil
  • 2 large onions, diced
  • 4 cloves of garlic, finely chopped
  • 500 ml (16.9 fl oz) white wine
  • 2 carrots, diced
  • 3 bay leaves
  • Chives, to serve
  • Salt and pepper to taste

Instructions:

  1. Heat the olive oil in the skillet. Add the pieces of lamb and fry over medium heat until golden brown.
  2. Add the chopped onion and garlic to the pan and fry until the onion is translucent.
  3. Add the white wine to the pan, increase the heat and cook until the alcohol evaporates.
  4. Add the carrots and bay leaves, then cover the pan and reduce the heat to a minimum. Stew for about 2 hours until the meat is tender.
  5. Season with salt and pepper to taste, then sprinkle with chives just before serving.
