Ingredients:

  • 200 g (7 oz) rice noodles
  • 1 onion, diced
  • 2 cloves of garlic, chopped
  • 2 tablespoons vegetable oil
  • 2 tablespoons fish sauce
  • 2 tablespoons soy sauce
  • 2 tablespoons palm sugar
  • 2 eggs
  • 200 g (7 oz) peeled shrimp
  • 50 g (2 oz) chopped peanuts
  • 1 chili pepper, sliced
  • 1 lime, cut into quarters
  • cilantro for garnish

Instructions:

  1. Cook the rice noodles according to the instructions on the package. Drain and set aside.
  2. Heat oil in a pan, add the onion and garlic, and sauté for about 1 minute.
  3. Add the shrimp, chili, and peanuts and sauté for another 2-3 minutes.
  4. Mix the fish sauce, soy sauce, and palm sugar in a bowl and add it to the pan.
  5. Add the cooked noodles to the pan and stir until well combined.
  6. Push the noodles to one side of the pan and scramble the eggs, cook until done, and then mix them with the rest of the ingredients.
  7. Serve on a plate with quartered lime and garnish with chopped cilantro.
