Ingredients:

  • 1 whole duck (about 2kg/70oz)
  • 5 medium apples
  • 1 tablespoon of marjoram
  • Salt and pepper to taste
  • 200g (7oz) butter
  • 200ml (6.7fl oz) of water

Instructions:

  1. Wash the duck thoroughly, pat dry and rub with salt, pepper and marjoram.
  2. Wash the apples, cut into quarters and remove the cores. Then stuff the duck with them.
  3. Transfer the duck to the roasting pan, skin side down. Pour water and add diced butter.
  4. Bake the duck in an oven preheated to 180°C (356°F) for about 2 hours. Every half hour, baste the duck with the fat that melted during roasting.
  5. After roasting, turn the duck skin side up and bake for about 30 more minutes, until the skin is crispy.
  6. Serve hot, cut into portions, with apples and the sauce that formed during baking.
