  • 300g (10.5oz) Arborio rice
  • 1 onion, finely chopped
  • 2 cloves of garlic, chopped
  • 60g (2oz) butter
  • 120ml (4oz) white wine
  • 1l (34oz) vegetable broth
  • 100g (3.5oz) Parmesan cheese, grated
  • Salt and pepper to taste
  • Olive oil

Instructions:

  1. In a pot, heat olive oil and 20g (0.7oz) of butter. Add the onion and garlic, sauté them over medium heat until they become soft.
  2. Add the rice and sauté it for 2-3 minutes until it becomes slightly translucent.
  3. Add the wine and cook until it is absorbed by the rice.
  4. Gradually add hot vegetable broth, one ladleful at a time, cooking and stirring until the rice absorbs the broth. Continue this process for about 20 minutes until the rice is tender and creamy.
  5. Add the remaining butter and Parmesan cheese. Stir until the butter melts and the cheese melts. Season with salt and pepper to taste.
