Ingredients:

  • 8 medium or 6 large eggs
  • 1/3 level teaspoon of salt (0.17oz) + generous pinch of pepper
  • 2 tbsp milk or heavy cream 30% (0.68oz)
  • a teaspoon of ghee (0.17oz)
  • 2 tbsp. oil from a jar of sun-dried tomatoes (0.68oz)
  • 1 small onion + chives - about 100 g (3.5 oz)
  • 2 cloves of garlic - about 10 g (0.35 oz)
  • a handful of spinach leaves - about 50 g (1.76 oz)
  • 3 pieces of dried tomato in oil - about 40 g (1.41 oz)
  • 150 g cheese - e.g. 80 g feta (2.82 oz) and 70 g cheddar (2.47 oz)
  • two sprigs of rosemary

Instructions:

  1. Crack the eggs into a bowl, add salt, pepper and milk. Mix everything thoroughly.
  2. Heat the oil in a frying pan, add the chopped onion and chives. Fry for five minutes.
  3. Add the sliced garlic. Cook for another two minutes.
  4. Add spinach and sun-dried tomatoes. Cook for two minutes.
  5. Put the contents of the pan into the bowl with the eggs. Stir.
  6. Heat the butter in a frying pan, pour in the egg mixture. Fry for five minutes.
  7. Place cheese slices and rosemary leaves on top.
  8. Transfer pan to 180 degree oven. Bake for 10 minutes.
