Ingredients:

  • 200 g (7 oz) dry pasta, e.g. Rigatoni
  • 250 g (8.8 oz) spinach leaves
  • 1 onion - 100 g (3.5 oz)
  • 2 tablespoons (1 oz) clarified butter
  • 3 cloves of garlic
  • 3 tablespoons of lemon juice
  • 150 ml (5 fl oz) 30% cream
  • 100 g (3.5 oz) Parmesan hard cheese
  • spices: 1/4 teaspoon salt, a pinch each of pepper and nutmeg

Instructions:

  1. Cook the pasta according to package directions.
  2. Meanwhile, heat the butter in a pan and fry the finely chopped onion in it.
  3. Add garlic and spinach, cook until spinach is tender.
  4. Add lemon juice, cream and spices. Cook on low heat for a few minutes.
  5. Add the cooked pasta to the spinach sauce and mix well.
  6. Serve sprinkled with grated cheese.
