Ingredients:

  • 300 g (10.6 oz) pasta e.g. shell - weight before cooking (600 g (21.2 oz) already cooked)
  • 100 g (3.5 oz) raw smoked bacon
  • 4 medium or large eggs
  • 4 tbsp heavy cream 30% - 40 g (1.4 oz)
  • 2 tablespoons of oil or clarified butter
  • half a level teaspoon of salt and pepper
  • handful of chives

Instructions:

  1. Cook the pasta according to package directions.
  2. Heat oil or clarified butter in a frying pan and fry the bacon in it.
  3. In a bowl, combine eggs, cream, salt and pepper.
  4. Add the cooked pasta to the pan with the bacon and mix it all together.
  5. Pour the egg liquid into the pan and keep stirring until the egg is set.
  6. Add chopped chives at the end.
