Ingredients:
- 4 large potatoes
- 300 g (10.5 oz) ground meat
- 1 onion
- 2 cloves of garlic
- 1 red bell pepper
- 1 carrot
- 1 tablespoon of tomato paste
- 1 teaspoon of dried oregano
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions:
- Thoroughly wash and cook the potatoes in salted water until tender. Then, drain and let them cool.
- In the meantime, prepare the filling. Heat olive oil in a pan, add chopped onion and garlic. Sauté for about 3-4 minutes until the onion softens.
- Add ground meat and sauté for about 5 minutes until it browns. Then, add diced bell pepper and carrot. Sauté for another 5 minutes.
- Add tomato paste, oregano, salt, and pepper to taste. Mix everything well and sauté for about 2 minutes.
- Cut the cooled potatoes in half lengthwise and scoop out the center with a spoon, leaving about a 1 cm border.
- Fill the potatoes with the prepared filling, ensuring it fills the entire space. Place the potatoes on a baking sheet and bake in an oven preheated to 200°C (392°F) for about 20-25 minutes.
