Ingredients:

  • 1 kg of boiled potatoes (35.3 oz)
  • 9 heaping tablespoons of fine wheat flour - about 230 g (8.1 oz)
  • 1 medium or small egg
  • flat teaspoon of salt

Instructions:

  1. Grind boiled potatoes in a food processor or pass through a potato press.
  2. Sift nine heaping tablespoons of wheat flour onto a work surface.
  3. Put a smooth potato mixture on a pastry board, break in an egg and add salt.
  4. Knead everything until smooth with no lumps.
  5. Roll out the dough into a string about 2 cm thick and cut dumplings about 1.5-2 cm long.
  6. Cook the dumplings in salted water, then wait about 90 seconds after they float to the top.
  7. Pick out the dumplings, drain excess water and place on a plate.
