Ingredients:

  • 300 g pasta e.g. Rigatoni - weight before cooking (10.6 oz)
  • A little over half a cup of pasta water - about 130 ml (4.4 fl oz)
  • 1 medium or small broccoli - about 580 g (20.5 oz)
  • 1 large onion - up to 220 g (7.8 oz)
  • 1 garlic clove - about 5 g (0.2 oz)
  • 6 tablespoons of heavy cream 30% (6 tablespoons)
  • 1 tablespoon of cooking oil (1 tablespoon)
  • 1 tablespoon (1 tablespoon) of clarified butter
  • 1 teaspoon of potato starch or wheat flour (1 teaspoon)
  • 40 g Parmesan or Cheddar cheese (1.4 oz)
  • Spices: 1/3 teaspoon of salt, 1/4 teaspoon of pepper each, 1/3 teaspoon of salt, 1/4 teaspoon of pepper, a pinch of nutmeg)

Instructions:

  1. Boil the broccoli in salted water for about seven minutes. Once cooked, drain and cut into smaller pieces.
