Ingredients:
- 300g (10.5oz) penne pasta
- 200g (7oz) green asparagus
- 2 tablespoons (30ml) olive oil
- 2 cloves of garlic, finely chopped
- 200ml (6.75 fl oz) cream 30%
- 50g (1.75oz) Parmesan cheese, grated
- Salt and pepper to taste
- A few basil leaves for decoration
Instructions:
- Cook the pasta according to the instructions on the package. Remember to salt the pasta cooking water.
- In the meantime, prepare the asparagus. Trim off the woody ends and cut the asparagus into pieces about 3 cm long.
- Heat the olive oil in a skillet over medium heat. Add garlic and fry until fragrant.
- Add the asparagus to the pan and cook for about 5 minutes until slightly soft.
- Add the cream to the asparagus, season with salt and pepper, then cook over low heat for about 5 minutes.
- Add the cooked pasta to the sauce, toss to coat the pasta evenly with the sauce.
- Add grated Parmesan cheese, mix and cook for another 2 minutes.
- Serve hot, sprinkled with extra Parmesan cheese and garnished with basil leaves.
