Ingredients:

  • 500g (17.6oz) fresh broad beans
  • 200g (7oz) pasta, e.g. gimlets
  • 75g (2.6oz) pitted green olives
  • 5 tablespoons of olive oil
  • Several small tomatoes (up to 200g/7oz)
  • 20g (0.7oz) Parmesan or similar cheese
  • 2 cloves garlic (10g/0.35oz)
  • Additions: thyme sprig, basil leaves, lemon, salt and pepper

Instructions:

  1. Cook the broad beans in a pot of water for about 6 minutes. Once cooked, transfer to a strainer and rinse under cold water. Gently remove the hulls.
  2. Meanwhile, cook the pasta according to package directions. Once cooked, transfer to a colander and set aside to cool.
  3. Heat the olive oil in a frying pan, add the chopped garlic and cooked broad beans. Fry for two minutes.
  4. In a large bowl, combine cooked pasta, broad beans, tomatoes and olives. Mix gently.
  5. Serve dish sprinkled with cheese, lemon juice and olive oil. Season with salt, pepper and garnish with basil leaves.
